Beef Bourguignon and Risotto-Style Hearty Rice

For all you snowbound East Coasters, a recipe for some comfort food that warms you right up…  I made a batch of this yesterday (and I’m going to be eating this for a few days).  It is most definitely GIKKU approved!

Big Al’s Beef Bourguignon
1 tablespoon extra virgin olive oil
4 tablespoons salted butter
1/4 pound good slab bacon, cut into 1/2-inch cubes
1-1 1/2 pounds beef chuck (I used sirloin because it was on crazy sale at the market), cut into 1 1/2- to 2-inch cubes
2 tablespoons flour
Salt and pepper to taste
2 teaspoons dried thyme
2 teaspoons cayenne pepper
1 large yellow onion, peeled and chopped
2 cloves garlic, peeled and lightly crushed 
2 cups red wine (I used an $8 bottle of random red wine)
1 can (2 cups) chicken broth
12 white (button) mushrooms, cut into quarters 
6 cipollini onions (or 12 pearl onions), peeled and quartered (do not quarter if using pearl onions)

1. Put oil in a large sautee pan that can later be covered; turn heat to medium. Add bacon, and cook, stirring occasionally, until it is crisp and has given up most of its fat, about 10 minutes. Remove bacon with a slotted spoon, leaving all the fat in the pan. 

2. Lightly dust the cubed beef with flour, salt and pepper.  Add 2 tablespoons of butter to the pan, turn heat to medium-high. When the butter stops foaming, add beef to the pan.  Cook until meat is brown and crisp all over, about 10 minutes.  Remove beef from the pan, leaving the all the oil and fat in the pan.

3. Turn heat back down to medium, and add the last 2 tablespoons of butter.  After butter stops foaming, add diced yellow onions, thyme, garlic, cayenne pepper and more salt and pepper to taste. Cook, stirring occasionally, until onion softens, about 5 minutes. Add 1 cup wine and 1 cup of chicken broth, and let it boil for a minute or two, scraping the bottom of the pan with a wooden spoon to release all the browned bits. 

4. Return the beef to pan.  Cover and lower heat so mixture simmers gently for about an hour.  Go play video games in the meantime.  I highly recommend Rock Band.

5.  After the hour is up, add the mushrooms, cipollini onions and bacon.  Add the remaining 1 cup of wine and 1 cup of broth.  Turn heat back up to bring the pan back to a simmer, then reduce heat to a gentle simmer.  Re-cover, and cook until tender. Depending on meat, dish could be done in as little as 45-60 minutes more (for higher quality cuts) or another 90 minutes (if using chuck). Taste and adjust seasoning, then garnish and serve, or cover and refrigerate for up to 2 days before reheating.

Risotto-Style Hearty Rice
2 cups Jasmine long-grained rice
2 tablespoons butter
1 tablespoon olive oil
1 clove garlic, minced
1 small onion, diced
salt and white pepper to taste
grated asiago cheese to taste
(this recipe assumes you have a rice cooker)

1. Heat butter and olive oil on medium heat in a large sautee pan until butter foams up then subsides.  Add onions, garlic, salt and pepper to the pan and sautee until the onion is soft but not brown, about 5 minutes.

2. Add the uncooked rice to the pan and increase the heat to medium high.  Stir continuously to avoid burning the rice.  Turn off the heat after about 5 minutes and transfer the contents of the pan to a rice cooker.

3.  Add water to the rice cooker and press the cook button.

4. When the rice is done, stir it gently, then transfer to the serving plate.  Top with grated asiago cheese.

5.  Ladel the beef bourguignon onto the plate and serve (with ice cold Coca Cola)!

HEAVY SNOW THIS AFTERNOON AND EARLY EVENING WITH TOTAL SNOW ACCUMULATIONS OF 6 TO 12 INCHES ARE LIKELY…WITH HIGHEST AMOUNTS ALONG AND SOUTH OF THE MASSACHUSETTS PIKE INTO NORTHERN CONNECTICUT… NORTHERN RHODE ISLAND AND NEARBY SOUTHEAST MASSACHUSETTS.

THE SNOW WILL QUICKLY BECOME HEAVY AT TIMES AND SNOWFALL RATES OF 1 TO 2 INCHES PER HOUR ARE EXPECTED…WITH POSSIBLY UP TO 3 INCHES PER HOUR IN SOME LOCATIONS. THIS WILL HAVE A MAJOR IMPACT ON THE LATE DAY COMMUTE AS THE HEAVIEST SNOW AND LOWEST VISIBILITIES WILL BE DURING THIS TIME.

A HEAVY SNOW WARNING IS ISSUED WHEN AN AVERAGE OF 6 OR MORE INCHES OF SNOW IS EXPECTED IN A 12 HOUR PERIOD OR FOR 8 OR MORE INCHES IN A 24 HOUR PERIOD. TRAVEL WILL BE SLOW AT BEST ON WELL TREATED SURFACES…AND QUITE DIFFICULT ON ANY UNPLOWED OR UNTREATED SURFACES.

I fired up my heater for the first time this year.  The temperature hit 61 degrees (inside my house) this morning.  That’s “freezing” in LA, for all you East Coasters out there.

Snow in LA: Believe It!

OK, well, there wasn’t snow in the city of LA, but there’s a whole lot of snow up in the mountains east of here.  Yesterday, I drove up to Snow Summit for a little solo snow adventure (you know, to start my work week off right).  A foot of fresh powder, and no crowds.

[I’m pumping gas when it suddenly slows to a trickle, then stops completely after 0.713 gallons dispensed…]

Me: Excuse me, the pump just stopped pumping.

Gas Station Attendant: Oh man, we’re outta gas again.

Me: Uh… the gas station ran out of gas?

Gas Station Attendant: The economy’s bad.

Me:

Gas Station Attendant: The owner didn’t put up the $50,000 deposit for gas this month.  No delivery.  No gas.

Me: No gas for me?

Gas Station Attendant:  No gas for you.  No gas for nobody.
