Huevos to the Rancheros

1 tomato
1 whole jalepeno pepper
1/2 onion
1 garlic clove
4 eggs
1/2 can of refried beans
5 corn tortillas
salt, pepper and cumin to taste

Heat a skillet on medium heat; place tomato, onion, jalepeno pepper and garlic clove in the skillet and roast for 10-15 minutes, until all sides are charred nicely.  Chop up the roasted veggies and place in small covered saucepan.  Bring salsa to a brisk simmer, then add salt, pepper and cumin to taste.  Stir occasionally.  Turn down to a low simmer and cover.

Lightly toast the tortillas in a skillet with a tiny bit of oil, so they get warm and toasty but not crispy.  Heat up the refried beans.  Fry up the eggs any style you want (I prefer sunnyside up). 

Place the tortillas on the serving plate, and cover with the beans, then top with the eggs.  Put the salsa on top, crack some fresh black pepper over the whole thing. 

Open up a frosty Coca Cola, and enjoy.
